The Morrison Bar & Oyster Room

Perennial Sydney favourite the Brooklyn Hotel has been reborn as a San-Francisco-style stylish eatery called The Morrison Bar & Oyster Room, thanks to an all-star line up including hotelier Fraser Short, chef Sean Connolly and architect Jeremy Bull of Akin Creative.

Each of three distinct areas is linked by warmth, texture and industrial furniture and lighting, customised for the space that straddles the heritage George Street frontage and the Harry Seidler-designed Grosvenor Place.
Freshly shucked oysters are the focus but the brasserie-style food is not to be missed, including dishes designed to be shared, such as the Saltimbocca King Salmon Tail or Free-Range Lamb Shoulder.
